Chewy oatmeal cookies filled with cranberries, pecans, and dark chocolate chunks.
- 1 stick butter (softened)
- 2/3 cup brown sugar
- 1/4 cup white sugar
- 3/4 cup all purpose flour
- 1 1/4 cup oats (old fashioned or quick)
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp vanilla
- 1 egg
- 1/3 cup craisins
- 1/4 cup pecans (chopped)
- 2 oz dark chocolate
In a large bowl, mix together the softened butter and sugars together until light and creamy, about 2-3 minutes.
Add the egg and vanilla. Mix until combined.
Add the flour, salt, baking soda, and oats. Mix until just combined.
Add the craisins, pecans, and dark chocolate pieces. Use a wooden spoon to mix until combined.
Using a spoon or a cookie scoop, drop a tablespoon or so sized cookie on the cookie sheet.
Bake at 350 for 8-10 minutes until the edges are light brown. Cool completely before eating (the cookies will firm up when cooled).
