Cherry Cordial Cookies

Cherry flavored shortbread cookie topped with a Cherry Cordial Hershey's Kiss.

Equipment

  • cookie sheets
  • 1 large mixing bowl
  • electric mixer

Ingredients

  • 1 stick butter, softened ((1/2 cup))
  • 1/2 cup powdered sugar
  • pinch salt
  • 1 tsp maraschino cherry juice
  • 1/4 tsp almond extract
  • 1 cup all purpose flour
  • 1/4 cup chopped maraschino cherries
  • 24 Hershey's Cherry Cordial Kisses
  • granulated sugar

Instructions 

  • Preheat oven to 325 °F
  • In a large mixing bowl, beat the butter for 30 seconds. Add powdered sugar and salt, continue mixing until light and fluffy.
  • Add almond extract, cherry juice and mix together.
  • Slowly add the flour. Mix together until the dough become stiff.
  • Add the chopped cherries at the end and mix until just combined. If the dough is too stiff for the mixer, simply use a spoon.
  • Roll dough into 1 inch round balls. Place dough on ungreased cookie sheet and flatten a bit with the bottom of a glass. Cookies should still be about 1/2 inch thick.
  • Bake at 325 °F for 12-14 minutes until the bottoms are light brown.
  • Remove from the oven and immediately place a Cherry Cordial Hershey's Kiss in the center.
  • Let cool completely before eating. (The Hershey Kiss should no longer look shiny.)

Notes

You can also roll the tops of the dough in sugar before baking to give them an extra sparkle. Or add granulated sugar to the bottom of the glass before flattening them If you do add sugar, try not to get it on the bottom of the cookie as that will cook faster than the cookie itself, leading you to believe they are done before they actually are.
