Fluffy, pumpkin pancakes topped with fresh, homemade cinnamon butter. They’re everything you could want for a fall breakfast.

Pumpkin pancakes just scream fall. They pair perfectly with coffee and make a great breakfast treat. These pumpkin pancakes are inspired by those served at Luke’s Diner in Gilmore Girls (the all-time best fall rewatch show if I may say so 😉 ).

“Okay. Uh, hey, are you in the mood for pancakes?”

“Pancakes, sure, yeah. I guess we have enough space for pancakes.”

“Cause I’m making pumpkin pancakes and it comes with homemade cinnamon butter.”

“You made cinnamon butter?”

“This morning.”

“Wow. I bet the other people who would love a table right now but can’t have one ’cause they’re all taken would love pumpkin pancakes with homemade cinnamon butter.”

Why you’ll love these pumpkin pancakes

  • Light & Fluffy. Pumpkin pancakes are notorious for being dense due to the amount of liquid and pumpkin in the batter. While still slightly thicker than the average pancake, these have just the right amount of pumpkin to give them flavor while still keeping the fluffy texture.

How to Make Pumpkin Pancakes

Step 1: Whisk together flour, brown sugar, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice in a large mixing bowl.

Step 2: Add the canned pumpkin, buttermilk, egg, and oil to the dry ingredients. Whisk together until smooth. Because of the pumpkin, the batter will be thicker than regular pancake batter.

Step 3: Scoop ¼ cup of batter for each pancake and pour onto the hot griddle. You can make 4 pancakes at a time on a standard size griddle. Cook until you see a few bubbles form. Because the batter is thicker, you won’t see as many bubbles as regular pancakes. When the sides start to cook, flip the pancakes.

Step 4: Ensure the pancakes are cooked through before removing from the heat (they will take longer because they’re thicker).

Step 5: While the pancakes cook, whip the softened butter and add 1 tsp of cinnamon. Mix together.

Serve pancakes warm with fresh cinnamon butter and syrup and pretend you’re sitting in Luke’s Diner with Lorelai and Rory.

  • 2 cups flour
