These ice box cookies are a brown sugar cookie filled with dark chocolate pretzel pieces that’s chewy on the inside with crispy edges.
These ice box cookies are an adaptation of my great-grandma’s recipe. While I never met her, I’ve heard great stories about her from my dad, and she passed down a lot of classic recipes.
These cookies are simple to put together and are perfect with your cup of coffee or tea in the morning. Traditionally, my great-grandmother’s recipe didn’t include dark chocolate pretzel pieces, but rather pecan pieces. I am not a huge fan of nuts in cookies so I decided to mix it up a bit and still try to get the saltiness the pecans provide but also add a bit of chocolate. I used Imperfect Foods’ Dark Chocolate Pretzel Pieces (which are delicious).

Tips for Success
Combine room temperature butter and sugar first and blend until fluffy, about 2 minutes.
Mix all ingredients well finishing with whatever fixings you are adding—whether that is dark chocolate pretzel pieces or pecans.
Roll into logs. Whatever shape you roll your cookie dough into will influence the shape of your cookies. Don’t worry if they aren’t perfectly round. Many times these cookies will be flatter on the bottom.
Chill overnight or freeze for a few hours. You want the cookie dough to be chilled so that they keep their shape.

Equipment
- 1 mixing bowl
- 1 cookie sheet
Ingredients
- 1 cup brown sugar
- 1 egg
- 1/2 cup butter (1 stick)
- 1/2 tsp vanilla
- 1/2 tsp cream of tartar
- 1/2 tsp baking soda
- 1 1/2 cups flour
- 1/2 tsp salt
- 1/2 cup crushed dark chocolate covered pretzels
Instructions
- Mix the sugar and the butter together until smooth.
- Add egg and vanilla.
- Sift together flour, cream of tartar, baking soda, and salt.
- Combine wet ingredients with the dry ingredients and mix until combined.
- Stir in dark chocolate pretzel pieces. Roll dough into a log and wrap in plastic wrap.
- Chill overnight.
- Slice into 1/2 in pieces and bake at 350 for 10 minuntes. These cookies will spread to place them at least 2 inches a part.
