My husband asked me the other day to make “healthy cookies” or something he could eat for breakfast with his tea. Enter these cranberry pecan oatmeal cookies. They are soft, chewy and an excellent breakfast cookie option. I think dark chocolate makes everything better so I also added some dark chocolate chips to sweeten them up. Pair with your favorite cup of tea or coffee.

Keys to Successfully Make Cranberry Pecan Oatmeal Cookies
One of the best things about these cookies is how easy they are to make. Everything goes into one bowl so it’s more about the order you add the ingredients more than anything else.
Cream the butter and sugars together until light and fluffy. This usually takes 3-4 minutes to ensure the fat and sugars are well combined.
Add the egg and vanilla and mix until combined. You’ll then add the dry ingredients (flour, baking soda, salt, oats) and mix until just combined. You don’t want to over mix the dough. You can either use a stand mixer or use a wooden spoon to mix in the oats.
Add the craisins, pecans, and dark chocolate chunks. Mix with a wooden spoon until combined. If you want to reduce the sweetness, feel free to remove the dark chocolate chunks. You can also swap out the pecans for walnuts.
Bake for 8 minutes until the edges are just golden brown. The cookies will continue to bake after you take them out of the oven. Be sure to have the cookies cool completely before eating them.

Cranberry Pecan Oatmeal Cookies
Ingredients
- 1 stick butter (softened)
- 2/3 cup brown sugar
- 1/4 cup white sugar
- 3/4 cup all purpose flour
- 1 1/4 cup oats (old fashioned or quick)
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp vanilla
- 1 egg
- 1/3 cup craisins
- 1/4 cup pecans (chopped)
- 2 oz dark chocolate
Instructions
- In a large bowl, mix together the softened butter and sugars together until light and creamy, about 2-3 minutes.
- Add the egg and vanilla. Mix until combined.
- Add the flour, salt, baking soda, and oats. Mix until just combined.
- Add the craisins, pecans, and dark chocolate pieces. Use a wooden spoon to mix until combined.
- Using a spoon or a cookie scoop, drop a tablespoon or so sized cookie on the cookie sheet.
- Bake at 350 for 8-10 minutes until the edges are light brown. Cool completely before eating (the cookies will firm up when cooled).
